Baked fillet of fish

Hello all,

Tonight is another simple meal which you can make under a hour.

Gather two fillet of fish
Three sweet potatoes
Bowl
Baking pan
Olive oil
Salt
Garlic
Paprika
Greek yogurt
Jerk season

Preheat oven to 450°

1.
Combine 1/3 cup of greek yogurt and about 1-2 tables spoon of jerk season. Taste for and adjust accordingly.

Once integrated coat both sides of fillet.
Coat pan with olive oil lightly.

Place fillet in pan and inset into oven 7 to 10 minutes turning in between

2.
Wash and slice three sweet potatoes. Drizzle with olive oil,  sprinkle salt, paprika, and garlic (fresh, or powdered)

Lightly coat pan with olive oil

Taste and adjust accordingly

Place sweet potatoes on in pan and bake 35 minutes, turning in between until crispy or soft depends on your perferred texture.

Remove let cool and serve with either remaining sauce or condiments of your choice.

Broil fish filet

Today I'm going to tell you how to make a simple dish which can either be use for lunch or dinner.

Broil Fillet of Fish

-Fillet of fish
-olive oil
-parsley or green onion 
-season of your choice ( I use simple black pepper, cayenne pepper, onion powder)

Sauce
-greek yogurt
-honey
-salt (your preference not necessary)
-black pepper  (I use cayenne)
-lemon juice  (I just squeeze a lemon)

I season my fish lightly. The reason is because all the flavour would come from the sauce. If you want to use a simple mixture of spices go with old bay.

-set you oven on broil
-use a oven approved pan, lightly spray or smear with olive oil.
-cook for about 3-5 minutes flipping once.
-remove from pan and let sit

Sauce
-combine 1/4 cup or 1/3 of greek yogurt  (depends on the serving size) I used a 1/3 because I use 6 pieces of fillet

2 tsp of  honey
salt, pepper, and squeeze lemon or about 1-2 tsp of lemon juice

Whisk together test for taste and adjust accordingly

-chop parsley for garnish.

-drizzle sauce on fillet or serve on the side

Once complete service with you choice of side (rice, veggies, etc.)

cooking 101 filet mignon

It's been a while, my apologies to my readers. I'm going to try something new or I should say I'm going to add something to my posts. I enjoy cooking when I'm not traveling across the world. Today I decided to post one of my meals.

Depending on the thickness of the tenderloin it can cook quicker, be sure to watch it to get it to the right level of wellness

The tenderloin should have a crispy top and bottom before you place it in the oven keeping in mind the 3-4 minutes of cooking on both sides.


Here are some ways to test your judgement on the tenderloin done-ness 

1. If you know how to cook and have cook a filet mignon use your previous judgments

2. A cooking thermometer with the proper gauges to tell you the wellness of your tenderloin 

3. There is a feel method, I'm not a pro at the feel method. I just cook it until I think it's ready, slice it open on check the level of wellness 

Add the side of your choice. I like spinach with a dip I learn to make from a good friend. ( corn, black beans, onions, cilantro, and balsamic vinegar) 



There you have it.  A beautiful meal with little stress on preparing and cooking.
